Dragon Chicken Dish

Ingredients:

  • 500 grams of boneless chicken, cut into bite-sized pieces
  • 1 cup of cornflour
  • 1/2 cup of all-purpose flour
  • 2 large eggs
  • 1 teaspoon of ginger-garlic paste
  • 1 teaspoon of red chili powder
  • 1 teaspoon of black pepper powder
  • Salt to taste
  • Oil for deep frying
  • 1 tablespoon of soy sauce
  • 1 tablespoon of vinegar
  • 1 tablespoon of tomato ketchup
  • 1 tablespoon of chili sauce
  • 1 tablespoon of green chili sauce
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2-3 green chilies, slit
  • 1 tablespoon of sesame seeds (optional)
  • Fresh coriander leaves for garnish

Preparing the Chicken

  1. In a large mixing bowl, combine the chicken pieces with ginger-garlic paste, red chili powder, black pepper powder, and salt. Mix well to ensure the chicken is evenly coated with the spices.
  2. In a separate bowl, whisk together the eggs. Add the whisked eggs to the marinated chicken and mix until the chicken is well coated.
  3. In another bowl, combine the cornflour and all-purpose flour. Gradually add this flour mixture to the chicken and egg mixture, ensuring that each piece of chicken is well coated. This will give the chicken a crispy texture when fried.
  4. Let the chicken marinate for at least 30 minutes. This allows the flavors to penetrate the chicken and enhances the overall taste.

Deep Frying the Chicken

  1. Heat oil in a deep frying pan over medium heat. To check if the oil is hot enough, drop a small piece of the batter into the oil; if it sizzles and rises to the surface, the oil is ready.
  2. Carefully add the marinated chicken pieces to the hot oil in batches. Do not overcrowd the pan, as this will lower the oil temperature and result in soggy chicken.
  3. Fry the chicken for about 5-7 minutes or until golden brown and crispy. Use a slotted spoon to remove the chicken from the oil and place it on a plate lined with paper towels to absorb excess oil.
  4. Repeat the frying process until all the chicken is cooked. Set aside the fried chicken.

Preparing the Sauce

  1. In a large wok or frying pan, heat a tablespoon of oil over medium heat. Add the diced onion and sauté until translucent.
  2. Add the diced bell pepper and slit green chilies to the pan. Stir-fry for about 2-3 minutes until the vegetables are slightly tender but still crisp.
  3. In a small bowl, mix together the soy sauce, vinegar, tomato ketchup, chili sauce, and green chili sauce. Pour this sauce mixture into the pan with the sautéed vegetables.
  4. Stir well to combine the sauce with the vegetables and let it simmer for a minute to allow the flavors to meld.

Combining Chicken and Sauce

  1. Once the sauce is heated through, add the fried chicken pieces to the pan. Toss everything together gently to ensure the chicken is well coated with the sauce.
  2. If desired, sprinkle sesame seeds over the chicken and sauce mixture for added flavor and texture.
  3. Cook for an additional 2-3 minutes, allowing the chicken to absorb some of the sauce while ensuring it remains crispy.

Garnishing and Serving

  1. Remove the pan from heat and garnish the Dragon Chicken with freshly chopped coriander leaves.
  2. Transfer the Dragon Chicken to a serving platter. You can serve it hot as an appetizer or as a main dish alongside fried rice or noodles.
  3. For an extra kick, serve with additional chili sauce or a side of your favorite dipping sauce.
