Instructions

  1. Step 1: Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later.
  2. Step 2: In a medium saucepan, combine the natural peanut butter, honey (or maple syrup), and 2 tablespoons of the melted coconut oil. Heat over low heat, stirring frequently, until the mixture is smooth and well combined. Remove from heat and stir in the flaky sea salt.
  3. Step 3: Add the lightly crushed cornflakes to the peanut butter mixture. Stir gently but thoroughly until all the cornflakes are evenly coated.
  4. Step 4: Transfer the mixture to the prepared baking pan. Using a spatula or the back of a spoon, press the mixture down very firmly and evenly into the pan. Place the pan in the refrigerator for at least 30 minutes, or until the mixture is firm.
  5. Step 5: Once firm, lift the parchment paper to remove the block from the pan. Cut the block into desired bar shapes. In a microwave-safe bowl, combine the dark chocolate chips and the remaining 2 tablespoons of melted coconut oil.
