Ingredients
Scale
- 1 cup natural creamy peanut butter
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 3 cups cornflakes, lightly crushed
- 1 cup dark chocolate chips (70% cacao or higher)
- 1/4 teaspoon flaky sea salt
Instructions
- Step 1: Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later.
- Step 2: In a medium saucepan, combine the natural peanut butter, honey (or maple syrup), and 2 tablespoons of the melted coconut oil. Heat over low heat, stirring frequently, until the mixture is smooth and well combined. Remove from heat and stir in the flaky sea salt.
- Step 3: Add the lightly crushed cornflakes to the peanut butter mixture. Stir gently but thoroughly until all the cornflakes are evenly coated.
- Step 4: Transfer the mixture to the prepared baking pan. Using a spatula or the back of a spoon, press the mixture down very firmly and evenly into the pan. Place the pan in the refrigerator for at least 30 minutes, or until the mixture is firm.
- Step 5: Once firm, lift the parchment paper to remove the block from the pan. Cut the block into desired bar shapes. In a microwave-safe bowl, combine the dark chocolate chips and the remaining 2 tablespoons of melted coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is smooth and fully melted.
- Step 6: Dip each peanut butter bar into the melted chocolate, coating it completely. Place the chocolate-covered bars back onto the parchment paper-lined pan. Return to the refrigerator for another 15-20 minutes, or until the chocolate coating is fully set. Store in an airtight container in the refrigerator.
Notes
- Keep your delightful Butterfingers in an airtight container in the fridge to ensure the chocolate stays crisp and the bars hold their perfect shape for up to a week.
- If you prefer a slightly chewier texture, let your bars sit at room temperature for 5-10 minutes before enjoying, but they are truly best straight from the chill.
- Elevate your treat by crumbling a homemade Butterfinger bar over a scoop of your favorite ice cream or as a delightful crunch for plain yogurt.
- The key to perfectly structured, non-crumbly bars is to press the cornflake mixture down *very* firmly into the pan before chilling; don't hold back on the pressure!
