Ingredients
Scale
- 1 cup Plain Greek Yogurt (0% or 2% fat)
- 1/2 cup Mixed Berries (fresh strawberries, blueberries, or raspberries)
- 1/4 cup Low-Sugar Granola or Toasted Oats
- 2 tablespoons Sliced Almonds or Chopped Walnuts
- 1 tablespoon Chia Seeds or Flax Seeds
- 1 teaspoon Pure Maple Syrup or Honey
- 1/2 teaspoon Vanilla Powder
Instructions
- Step 1: In a small bowl, combine the Greek yogurt, maple syrup (or honey), and vanilla powder. Stir thoroughly until the mixture is smooth and the sweetener is fully incorporated.
- Step 2: Take a tall glass or small serving bowl. Spoon half of the prepared Greek yogurt mixture into the bottom to form the base layer.
- Step 3: Sprinkle half of the mixed berries and half of the chia seeds over the yogurt layer, followed by a light layer of granola/toasted oats.
- Step 4: Add the remaining Greek yogurt mixture on top of the fruit and granola layer, spreading it evenly to create the next layer.
- Step 5: Garnish the top of the parfait with the remaining mixed berries, the rest of the granola, and the sliced almonds or walnuts. Serve immediately for best texture, or cover and chill in the refrigerator for up to 4 hours.
Notes
- If storing leftovers or prepping ahead, always keep the granola and nuts separate until just before serving to maintain maximum crunch.
- Do not attempt to reheat this parfait; if the yogurt becomes too chilled, let it sit out for 5 minutes before eating to soften the texture slightly.
- For an extra boost of flavor and healthy fats, try drizzling a teaspoon of high-quality nut butter (like almond or cashew) over the top layer just before serving.
- To enhance the nutritional benefit and slightly thicken the base, pre-soak the chia seeds in 1 tablespoon of water for 15 minutes before mixing them into the yogurt layer.
