- 1/2 cup (120g) plain non-fat Greek yogurt
- 1 scoop (about 30g) vanilla protein powder
- 1/2 cup (60g) oat flour
- 1/4 cup (50g) granulated sweetener (e.g., erythritol or coconut sugar)
- 2 tablespoons (30g) melted unsalted butter or coconut oil
- 1 teaspoon vanilla bean paste
- 1/2 teaspoon baking powder
- 1/4 cup (40g) mini chocolate chips (optional)
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Step 2: In a medium bowl, whisk together the melted butter (or coconut oil), Greek yogurt, vanilla bean paste, and granulated sweetener until the mixture is smooth and well combined.
- Step 3: In a separate smaller bowl, combine the oat flour, vanilla protein powder, and baking powder. Gradually add these dry ingredients to the wet ingredients, mixing until just combined and no dry streaks remain. Fold in the mini chocolate chips, if you are using them.
- Step 4: Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie. Gently flatten each cookie slightly with the back of a spoon or your fingers, as they will not spread significantly during baking.
- Step 5: Bake for 10-12 minutes, or until the edges are lightly golden and the cookies are set. They may still appear soft in the center, but will firm up as they cool.
- Step 6: Allow the cookies to cool on the baking sheet for 5 minutes before carefully transferring them to a wire rack to cool completely.
Notes
- To keep your cookies wonderfully soft and fresh, store them in an airtight container in the refrigerator for up to 5 days.
- For a warm, just-baked experience, gently reheat a cookie in the microwave for 10-15 seconds, or warm in a low oven until just soft.
