Ingredients
- All-purpose flour – 1 ½ cups
- Granulated sugar – ½ cup
- Unsalted butter, softened – ½ cup (1 stick)
- Large egg – 1
- Very ripe banana, mashed – ½ cup (about 1 medium)
- alcohol-free vanilla extract – 1 teaspoon
- Baking soda – ½ teaspoon
- Powdered sugar – 1 cup
Instructions
- Step 1: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a large bowl, cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy.
- Step 2: Beat in the large egg until fully incorporated, then add the mashed very ripe banana and alcohol-free vanilla extract. Mix until all the wet ingredients are well combined.
- Step 3: In a separate medium bowl, whisk together the all-purpose flour and baking soda. Gradually add these dry ingredients to the wet mixture, mixing just until combined and no streaks of flour remain. Be careful not to overmix the dough.
- Step 4: Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set. Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Step 5: While the cookies cool, prepare the easy banana cream glaze. In a small bowl, whisk together the powdered sugar with 2-3 tablespoons of milk (or water) and an additional ¼ teaspoon of vanilla powder (or a few drops of banana extract if desired) until the glaze is smooth and has a pourable consistency.
- Step 6: Once the cookies are completely cooled, drizzle or spread the banana cream glaze over the top of each cookie. Allow the glaze to set for about 15-20 minutes before serving for the best "banana cream dessert cookie" experience.
Notes
- Keep your "Easy Banana Cream Dessert Cookies" fresh in an airtight container at room temperature for up to 3 days, or if you prefer a firmer texture, they’ll last an extra day in the fridge.
- If your cookies have chilled, allow them to come to room temperature for 15-20 minutes, or give them a quick 5-10 second microwave burst to gently re-soften and bring out that wonderful banana scent.
- These delightful cookies are a complete treat on their own, but they also pair beautifully with a simple scoop of vanilla ice cream or a warm mug of your favorite coffee or herbal tea.
- For the most intense banana flavor and a wonderfully moist cookie, ensure your banana is truly overripe with plenty of brown spots; this natural sweetness will make all the difference.
